🌽🔥 Stuffed Sausage, Jalapeño & Cheese Skillet Cornbread
Ingredients
Cornbread Batter

1 cup cornmeal

1 cup all-purpose flour

1 tbsp baking powder
-
¼ cup sugar (optional, depending on sweetness preference)

½ tsp salt
-
1 cup buttermilk
-
2 eggs
-
¼ cup melted butter or vegetable oil
Stuffed Filling
-
½ lb (225g) breakfast sausage or spicy sausage
-
1–2 jalapeños, diced (seeds removed for less heat)

1 cup shredded cheese (cheddar or a melty blend)
-
1 tbsp butter (for the pan)
Instructions
1. Prepare the Filling

In a skillet, cook the sausage over medium heat until browned.

Add diced jalapeños and cook 2–3 minutes until softened.

Remove from heat and stir in shredded cheese. Set aside.
2. Make the Cornbread Batter

In a bowl, mix the cornmeal, flour, baking powder, sugar, and salt.

In another bowl, whisk the buttermilk, eggs, and melted butter/oil.

Pour the wet ingredients into the dry and mix gently until combined.
3. Layer the Cornbread

Preheat oven to 400°F (205°C).

Place a cast-iron skillet on the stove with 1 tbsp butter and let it melt.

Pour half of the cornbread batter into the hot pan.

Add the sausage–jalapeño–cheese mixture evenly on top.

Pour the remaining batter over the filling to fully cover.
4. Bake
-
Bake for 20–25 minutes, or until golden brown and a toothpick inserted in edges comes out clean.

Let cool for 5 minutes before cutting.
