🦀 Crab-Stuffed Cheddar Bay Biscuits with Lemon Butter
Ingredients:
For the Biscuits:

2 cups all-purpose flour

1 tbsp baking powder

1 tsp garlic powder

½ tsp salt

1 cup shredded sharp cheddar cheese

¾ cup cold buttermilk
-
½ cup (1 stick) unsalted butter, melted
For the Crab Filling:

8 oz lump crab meat (picked over for shells)

2 tbsp mayonnaise
-
1 tsp Dijon mustard
-
1 tsp lemon juice
-
1 tbsp chopped fresh parsley
-
Salt and pepper, to taste
For the Lemon Butter Topping:

3 tbsp melted butter
-
1 tsp lemon zest
-
1 tbsp lemon juice
-
½ tsp garlic powder
-
1 tbsp chopped parsley
Instructions:

Preheat oven:
Set to 425°F (220°C). Line a baking sheet with parchment paper. -
Make the crab filling:
In a bowl, combine crab meat, mayonnaise, Dijon mustard, lemon juice, parsley, salt, and pepper. Gently mix and set aside. -
Prepare the biscuit dough:
In a large bowl, whisk together flour, baking powder, garlic powder, and salt. Stir in cheddar cheese. Add melted butter and buttermilk; stir just until combined (dough will be slightly sticky). -
Assemble the biscuits:
Scoop about 2 tablespoons of dough and flatten slightly in your hand. Place 1 tablespoon of crab filling in the center, then top with another small piece of dough and pinch the edges to seal. Repeat with remaining dough and filling. -
Bake:
Place biscuits on the prepared baking sheet and bake for 12–15 minutes, or until golden brown. -
Make the lemon butter:
While baking, whisk together melted butter, lemon zest, lemon juice, garlic powder, and parsley. -
Finish and serve:
Brush warm biscuits generously with lemon butter right out of the oven. Serve immediately
