Chicken and Dumplings Casserole (Easy and Creamy)
This chicken and dumplings casserole is pure comfort food! It’s creamy and hearty, with fluffy dumplings baked on top. It’s perfect for family dinners.
🛒 Ingredients:
For the chicken layer:
3 cups of shredded cooked chicken (rotisserie chicken works well)
1 cup of chicken broth
1 x 10.5 oz can of cream of chicken soup
½ cup milk
½ teaspoon of garlic powder
½ teaspoon of onion powder
½ teaspoon black pepper
Salt to taste.
For the dumpling topping:
2 cups of all-purpose flour
1 tablespoon of baking powder
½ teaspoon of salt
½ cup of melted unsalted butter
1 cup of milk.
Optional add-ins:
1 cup of frozen mixed vegetables (peas, carrots and corn).
½ teaspoon of dried thyme or parsley.
👩🍳 Instructions:
1. Preheat the oven.
Preheat your oven to 175°C (350°F). Grease a 9×13-inch baking dish.
2. Make the chicken base.
In a large bowl, mix:
Shredded chicken
chicken broth
Cream of chicken soup
Milk
Garlic powder
Onion powder
Pepper
Salt
Stir well, then spread evenly into the prepared baking dish. Add the vegetables, if using.
3. Prepare the dumpling batter.
In another bowl:
Mix the flour, baking powder and salt together.
Stir in the melted butter and milk.
Mix until just combined (don’t overmix).
The batter will be thick.
4. Assemble
Spoon the dumpling batter evenly over the chicken mixture.
Do not stir — the dumplings will bake on top.
5. Bake
Bake uncovered for 40–45 minutes until golden brown.
The top is golden brown.
The dumplings are cooked through.
The edges are bubbly.
6. Rest and serve.
Leave to rest for 10 minutes before serving. This helps them to thicken.
Serve warm and enjoy! 🥰

Use rotisserie chicken for extra flavour.
Add shredded cheddar on top for a cheesy version.
For an extra creamy version, add two tablespoons of sour cream to the chicken mixture.
