Ingredients
For the meatloaf
1 ½ lbs ground beef
1 cup breadcrumbs
1 large egg
½ cup finely chopped onion
½ cup milk
Salt, pepper, garlic powder to taste
For the mashed potatoes
6 medium potatoes, peeled and cubed
4 tbsp butter
½ cup milk
Salt and pepper to taste
For the gravy
2 cups beef broth
Instructions
Prepare the potatoes
Place peeled and cubed potatoes in a large pot and cover with water. Add a pinch of salt. Bring to a boil over medium-high heat, then reduce heat and simmer until tender, about 15-20 minutes
Drain the potatoes and return to the pot. Add butter and milk. Mash until smooth and creamy. Season with salt and pepper. Set aside
Make the meatloaf
Preheat oven to 350°F (175°C)
In a large bowl, combine ground beef, breadcrumbs, egg, chopped onion, milk, salt, pepper, and garlic powder
Mix gently until just combined. Do not overmix, or the meatloaf will be dense
Shape the mixture into a loaf and place it in a greased baking dish
Bake the meatloaf
Pour 2 cups of beef broth around the meatloaf to keep it moist
Bake in the preheated oven for 55-65 minutes, or until the internal temperature reaches 160°F (70°C)
Optional: During the last 10 minutes, spoon some of the broth over the meatloaf for extra flavor
Serve
Slice the meatloaf and plate with a generous scoop of mashed potatoes
Drizzle some of the cooking broth over the meatloaf and potatoes for a homemade gravy effect
