🎄 Christmas Delight Cake
A soft vanilla cake layered with a creamy whipped pineapple filling, cherries, pecans, and coconut — like a holiday “sunshine” trifle meets a cake!

(You can sub with homemade cake if you prefer.)
Filling & Topping

1 (20-oz) can crushed pineapple, drained

1 cup powdered sugar

1 (8-oz) package cream cheese, softened

1 (8-oz) container whipped topping (like Cool Whip), thawed

1 cup chopped pecans

1 cup sweetened shredded coconut

1 small jar maraschino cherries, halved (optional but festive)
Instructions
1. Bake the cake

Preheat oven according to cake mix directions.

Prepare and bake cake in a 9Ă—13-inch pan.

Let cool completely.
2. Make the creamy topping

In a bowl, beat softened cream cheese and powdered sugar until smooth.

Fold in the whipped topping until creamy.

Stir in crushed pineapple (well drained), pecans, and coconut.

Add chopped maraschino cherries if using.
3. Assemble

Spread the Christmas delight mixture evenly over the cooled cake.
