- 1 tablespoon olive oil or sesame oil
- 2 cloves of garlic, minced
- 1 tablespoon of soy sauce
- Optional extras: a pinch of chilli flakes or sesame seeds.
For the steamed broccoli:
- 1 small head of broccoli, cut into florets
- Salt and pepper, and a little butter or olive oil (optional).
👩🍳 Instructions:
1. Prepare the roasted potatoes:
- Preheat the oven to 220°C (425°F).
- In a bowl, toss the diced potatoes and bell pepper with olive oil, paprika, garlic powder, oregano, salt and pepper.
- Spread them out evenly on a baking tray lined with parchment paper.
- Roast for 25–30 minutes, flipping halfway through, until golden brown and crispy.
2. Cook the steak:
- Pat the steaks dry with kitchen roll. Season generously with salt and pepper.
- Heat a frying pan or cast-iron skillet over a medium-high heat. Add olive oil.
- Once hot, add the steaks and sear for 3–4 minutes per side for medium-rare (adjust the time according to your preferred level of doneness).
- Add the garlic (and rosemary or thyme, if using) during the last minute to enhance the aroma.
- Leave the steak to rest for 5–10 minutes before slicing.
3. Sauté the bok choy:
- Heat the oil in a pan over a medium heat.
- Add the garlic and sauté for 30 seconds until fragrant.
- Add the bok choy and cook for 3–5 minutes, until the leaves have wilted and the stems are slightly tender.
- Add the soy sauce and stir well. Remove from the heat.
4. Steam the broccoli:
- Steam the florets in a steamer or a pot containing a small amount of water for 5–6 minutes, until tender but still firm.
- Season with salt and pepper, and add a little butter or oil if desired.
Serve:
- Arrange the sliced steak on a plate with a serving of roasted potatoes, sautéed bok choy and steamed broccoli.
- For extra flavour, drizzle steak juices or a splash of soy or garlic butter over everything.
