Melt In Your Mouth Chicken Breast
Ingredients (serves 2–3):
- 2 large boneless, skinless chicken breasts
- 2 tablespoons of olive oil (or melted butter).
- 3 tablespoons of honey
- 3 cloves of minced garlic
- 1 tablespoon Dijon mustard (optional, but adds great flavour)
- 1 teaspoon of soy sauce
- 1 tsp lemon juice
- 1 tsp fresh rosemary (or thyme), plus extra for garnish
- Salt and black pepper to taste.
Instructions:
1. Prepare the chicken.
Preheat your oven to 200°C/400°F.
Pat the chicken breasts dry with kitchen roll.
Season both sides with salt and black pepper.
2. Make the honey garlic sauce:
In a small bowl, whisk together honey, minced garlic, Dijon mustard, soy sauce, lemon juice and olive oil.
Add the chopped rosemary.
3. Sear the chicken (optional but recommended).
Heat a frying pan over a medium-high heat.
Sear each side of the chicken for two minutes until golden (this locks in the juices).
Transfer to a baking dish.
4. Bake
Pour the honey garlic sauce evenly over the chicken.
Bake in the oven for 20–25 minutes, or until the internal temperature reaches 75 °C/165 °F.
For extra flavour, baste the chicken with the sauce halfway through baking.
5. Finish and serve.
Remove from the oven and leave to rest for 5 minutes.
Spoon the sauce from the baking dish over the chicken.
Garnish with extra fresh rosemary.
Serving suggestions:
Serve with roasted potatoes, steamed vegetables, or fluffy rice.
A fresh green salad also goes well with it.
Tips for juicy chicken breast:
Don’t overcook — check the temperature with a thermometer.
Marinate the chicken for 30 minutes before cooking to enhance the flavour.
For a caramelised glaze, broil for two minutes at the end.
