🧀 Mediterranean spinach and feta crisps
Crispy, cheesy and full of Mediterranean flavour! Perfect as a snack or a low-carb side dish.

🍽 Servings: ~12 crisps
🛒 Ingredients:
- 1 cup of finely chopped fresh spinach (or 3/4 cup of frozen spinach, thawed and drained).
- 1 cup of shredded mozzarella cheese
- ½ cup crumbled feta cheese
- 1 large egg
- 2 tablespoons of almond flour (optional, to improve texture).
- 1 clove of garlic, minced
- ½ teaspoon of dried oregano
- ¼ teaspoon black pepper
A pinch of salt (feta is salty, so use sparingly).
👩🍳 Instructions:
Preheat your oven to 190°C (375°F).
Preheat your oven to 190°C (375°F). Line a baking sheet with parchment paper.
Mix the ingredients:
In a medium bowl, combine the following ingredients: chopped spinach, mozzarella, feta, egg, almond flour, garlic, oregano, pepper and a pinch of salt. Mix until well blended.
Scoop and flatten:
Drop tablespoon-sized heaps of the mixture onto the prepared baking sheet. Flatten each one with the back of a spoon to make thin rounds about 2.5 inches wide.
Bake:
Bake for 12–15 minutes or until golden and crispy around the edges.
Cool & Serve:
Leave the crisps to cool on the baking sheet for 5 minutes. They will firm up as they cool.
