  1. Rub the butter into the flour and salt in a large bowl until the mixture resembles breadcrumbs.
  2. Add cold water a little at a time until the dough comes together.
  3. Split the dough into two balls for the top and bottom, wrap them in cling film and refrigerate for 30 minutes while you prepare the filling.

Step 2: Make the filling:

  1. Boil the diced potatoes in salted water until soft (about 10–12 minutes). Drain them and mash them with a splash of milk or butter.
  2. In a pan, heat the oil and gently fry the chopped onion until soft and golden.
  3. Stir in the corned beef, mashed potatoes and optional herbs/Worcestershire sauce.
  4. Mix everything together until combined, then season well with salt and pepper. Set aside to cool.

Step 3: assemble the pie:

  1. Preheat your oven to 190°C (375°F) or 170°C fan/gas mark 5.
  2. Roll out one ball of pastry and line a greased pie dish or cake tin.
  3. Spoon in the filling and level it out.
  4. Roll out the second ball of pastry and place it over the top. Trim and crimp the edges to seal.
  5. Make a small slit in the middle to allow steam to escape.
  6. Brush the top with beaten egg for a golden finish.

Step 4: Bake:

  1. Bake in the preheated oven for 40–45 minutes or until the pastry is golden brown and crispy.

✅ Serving suggestions:

  • Serve warm or cold with baked beans, peas or a simple salad.
  • It goes great with brown sauce or a splash of vinegar!

ENJOY!
