Crispy Honey Garlic Shrimp Skewers with Tangy Lime Dip
Ingredients (serves 3–4):
- For the shrimp:
• 500g large shrimp, peeled & deveined
• 2 cloves garlic, minced
• 2 tbsp honey
• 1 tbsp soy sauce
• 1 tsp sesame oil (optional)
• Salt & pepper to taste
• ½ cup flour
• 2 eggs, beaten
• 1 cup panko or regular breadcrumbs
• Oil for frying
• Skewers (wooden or metal)
- For the Tangy Lime Dip:
• 3 tbsp mayo
• 2 tbsp Greek yogurt or sour cream
• 1 tbsp fresh lime juice
• ½ tsp lime zest
• 1 tsp honey
• A pinch of chili flakes or hot sauce (optional)
• Salt to taste
Instructions:
1. Marinate the shrimp:
In a bowl, mix shrimp with garlic, honey, soy sauce, sesame oil, salt, and pepper. Let marinate for 15–20 minutes.
2. Prepare the coating:
Set up three bowls — one with flour, one with beaten eggs, and one with breadcrumbs.
3. Coat the shrimp:
Dredge each shrimp in flour, then dip in egg, and finally coat in breadcrumbs.
4. Fry until crispy:
Heat oil in a pan over medium heat. Fry the shrimp for 1–2 minutes per side until golden and crunchy. Drain on paper towels.
5. Skewer and glaze:
Thread the crispy shrimp onto skewers. Lightly drizzle or brush with a mix of warm honey and a touch of soy sauce for that shiny glaze.
6. Make the dip:
In a small bowl, mix mayo, yogurt, lime juice, zest, honey, and chili flakes. Adjust with salt to taste — it should be creamy, zesty, and a little sweet!
7. Serve:
Arrange the skewers on a platter, drizzle a bit more honey garlic sauce on top, and serve with the lime dip on the side.
