Classic British barbecue dinner

🐔 1. Roast chicken with gravy

Ingredients:

  • 1 whole chicken or chicken breast slices
  • Salt, pepper, garlic powder, thyme
  • 1 onion (optional, for roasting with the chicken)
  •  500 ml of chicken stock or the juices from the roast
  • 2 tbsp flour (for thickening)

Instructions:

  • Preheat the oven to 190°C (375°F).
  • Season the chicken with salt, pepper, garlic powder and thyme.
  • Roast for 1–1.5 hours or until the juices run clear.

For the gravy:

  • Place the roasting juices in a pan, add the flour and whisk well. Gradually add stock and simmer until thickened.

🥔 2. Crispy roast potatoes:

Ingredients:

  • 4–5 potatoes (Maris Piper or King Edward)
  • Salt and pepper
  • Vegetable oil or goose fat

Instructions:

  • Peel and parboil the potatoes for 10 minutes.
  • Drain them and shake them in a colander to rough up the edges.
  • Heat the oil in a roasting tin, add the potatoes and roast at 200°C (400°F) for 45–60 minutes, turning them over halfway through.

🧆 3. Stuffing Balls

Ingredients:

  • 1 packet of sage and onion stuffing mix, or homemade (breadcrumbs, onion, herbs and stock).
  • Boiling water
  • Butter (optional).

Instructions:

  • Mix the stuffing ingredients with boiling water as directed.
  • Shape the mixture into balls and bake at 180°C (350°F) for 25–30 minutes until the outside is crispy.

🥓 4. Pigs in Blankets (Bacon-Wrapped Sausages)

Ingredients:

  • Chipolata sausages
  • Streaky bacon

Instructions:

  • Wrap each sausage in a strip of bacon.
  • Roast in the oven at 200°C (400°F) for 25–30 minutes, or until golden brown.

🥕 5. Honey-glazed carrots

Ingredients:

  • 2–3 carrots, peeled and chopped
  • 1 tablespoon of honey
  • 1 tbsp butter

Instructions:

  • Boil the carrots until tender, then drain them.
  • Toss in a hot pan with honey and butter for 2–3 minutes.

🥦 6. Steamed broccoli and green beans

Ingredients:

  • Tenderstem broccoli
  • Green beans
  • Salt

Instructions:

  • Steam for 4–6 minutes until the vegetables are vibrant and tender.
  • Season lightly.

🥔 7. Roasted parsnips

Ingredients:

  • 2–3 parsnips, peeled and halved
  • Olive oil, salt and pepper.

(Optional: a drizzle of honey or maple syrup.)

Instructions:

  • Toss the parsnips in oil and seasoning.
  • Roast at 200°C (400°F) for 35–40 minutes until golden.

🥯 8. Yorkshire pudding

Ingredients:

  • 100 g plain flour
  • 2 eggs
  • 100 ml milk
  • Pinch of salt
  • Oil for the tin.

Instructions:

  • Mix the flour, eggs, milk and salt together until smooth.
  • Heat the oil in the muffin tin until smoking hot and pour in the batter.
  • Bake at 220°C (430°F) for 20–25 minutes until risen and golden.

🍒 9. Cranberry sauce

Ingredients:

  • 150 g cranberries (fresh or frozen)
  • 100 g sugar
  • 100 ml water

Optional: orange zest

Instructions:

  • Simmer all the ingredients together for 10–15 minutes, until the berries burst and the sauce thickens.
