Chips, cheese and gravy.

Here’s a full recipe for chips, cheese and gravy a classic comfort food dish.

Ingredients (serves 2):

  1. 500 g (1 lb) of potatoes (or frozen chips/fries).
  2. 100 g (1 cup) of grated Cheddar cheese (or more if you like it extra cheesy).
  3. 300 ml (1¼ cups) of ready-made or homemade beef or chicken gravy.
  4. 2 tbsp vegetable oil (if making chips from scratch).
  5. Salt, to taste

Instructions:

1. Prepare the chips:

From scratch:

  1. Peel and cut the potatoes into thick chips or fries (optional).
  2. Rinse them in cold water and pat them dry with a towel.
  3. Toss them in vegetable oil and a pinch of salt.
  4. Bake at 220°C (425°F) for 25–30 minutes, turning halfway through, or deep fry at 180°C (350°F) until golden and crispy.

Using frozen chips:

  • Follow the packet instructions for the oven or air fryer.

2. Make the gravy:

  • If using gravy granules, mix with boiling water according to the packet instructions.

For homemade gravy:

  1. Melt 1 tablespoon of butter in a saucepan.
  2. Stir in one tablespoon of flour and cook for one minute.
  3. Slowly whisk in 300 ml of beef or chicken stock until smooth.
  4. Simmer for 5 minutes and season to taste.

3. Assemble:

  1. Place the hot chips on a plate.
  2. Sprinkle generously with grated cheddar cheese so that it begins to melt from the heat.
  3. Pour over the hot gravy until everything is smothered.

Serving tip:

  • Best enjoyed immediately, while the chips are still crispy under the gooey cheese and rich gravy. It pairs well with cold cola or a cup of tea for a true takeaway experience.
