🧀 Cheese scones recipe
Ingredients (makes 8–10 scones):
- 225 g (2 cups) of self-raising flour
- 1 tsp baking powder
- ½ teaspoon of salt
- ½ teaspoon of mustard powder (optional, to enhance the cheese flavour).
- 50 g (3½ tbsp) of cold, diced, unsalted butter
- 125 g (1¼ cups) of mature cheddar cheese, grated (plus extra for the topping).
- 150 ml (⅔ cup) milk (plus a little extra for brushing).
Method:
- Preheat the oven to 200°C (180°C fan)/400°F/Gas Mark 6. Line a baking tray with parchment paper.
- Mix the dry ingredients: in a bowl, combine the flour, baking powder, salt and mustard powder.
- Rub in the butter, adding it diced and rubbing it into the flour with your fingertips until the mixture resembles fine breadcrumbs.
- Add the grated cheese and stir it in, keeping a little aside for sprinkling on top.
- Bring the dough together by pouring in most of the milk and mixing gently with a knife until it just comes together into a soft dough. Add a splash more milk if needed. Don’t overwork it.
- Shape and cut: Tip the dough out onto a lightly floured surface and pat it to a thickness of about 2–2.5 cm (don’t roll it). Cut out rounds with a floured cutter.
- Place the rounds on a baking tray, brush the tops with milk and sprinkle with the reserved cheese. Bake for 12–15 minutes until golden and risen.
- Leave to cool slightly, then transfer to a wire rack. Once cool enough to handle, split in half and generously spread with butter.
