Ingredients (serves 2):
- 4 thick slices of bloomer bread
- 200 g of mature cheddar cheese, grated
- 1 medium red onion, thinly sliced
- 2–3 teaspoons of Henderson’s Relish (or Worcestershire sauce if unavailable).
- 1–2 teaspoons of butter (optional, for spreading).
- 1–2 teaspoons of mixed herbs or dried oregano (optional).
- Pinch of black pepper
- Sweet chilli sauce for dipping.
Instructions:
Prepare the bread:
- Preheat your grill to a medium-high heat.
- Lightly toast one side of the bloomer slices under the grill until golden brown.
Add toppings:
- Flip the bread so that the untoasted side is facing up.
- Optional: Spread a thin layer of butter for extra richness.
- Sprinkle the grated cheddar evenly over each slice.
- Arrange the red onion slices on top of the cheese.
Season and flavour:
- Drizzle each slice with Henderson’s Relish.
- Add a pinch of black pepper and a sprinkle of herbs, if desired.
Grill to perfection:

- Place the topped bread under the grill and cook until the cheese has melted and is bubbling and golden at the edges (this should take about 3–5 minutes).
Serve:
- Cut each slice in half or quarters.
- Serve hot with a generous dollop of sweet chilli sauce in the middle for dipping.
💡 Tip:
For an extra kick, mix a teaspoon of Henderson’s Relish directly into the grated cheese before topping the bread to spread the flavour more evenly.
