Mince and cheesy herb dumplings with five vegetables and sweet pickled onions in the gravy.

🥘 Ingredients:

For the mince and gravy:

  • 500 g beef mince
  • 1 large onion, diced
  • 2 cloves of garlic, minced
  • 2 tbsp vegetable oil
  • 2 tbsp plain flour
  • 500 ml beef stock
  • 2 tbsp tomato purée
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 4–5 chopped sweet pickled onions
  • Salt and black pepper to taste.

For the cheesy herb dumplings:

  • 200 g self-raising flour
  • 100 g shredded suet (beef or vegetable)
  • 75 g of mature cheddar cheese, grated
  • 1 tsp dried mixed herbs (or a mix of parsley, thyme and chives)
  • Pinch of salt
  • Around 100 ml cold water

For the 5 Veg:

  • 2 large carrots, sliced
  • 200 g cabbage, shredded
  • 150 g of peas
  • 150 g green beans
  • 200 g of mashed swede (turnip).

For the mashed potatoes:

  • 800 g potatoes, peeled and chopped
  • 50 g butter
  • 50 ml milk
  • Salt to taste.

🥣 Method:

1. Prepare the mince and gravy:

  1. Heat the oil in a large, deep pan over a medium heat.
  2. Add the diced onion and garlic and cook until softened.
  3. Stir in the mince and cook until browned.
  4. Sprinkle in the flour and stir for 1–2 minutes to coat the meat.
  5. Add the tomato purée, Worcestershire sauce, thyme, rosemary and sweet pickled onions.
  6. Pour in the beef stock, stirring well, then simmer for 15–20 minutes until the mixture has thickened. Season to taste.

2. Make the cheesy herb dumplings:

  1. In a bowl, mix together the flour, suet, cheese, herbs and salt.
  2. Gradually add water until a soft dough forms.
  3. Divide the dough into 6–8 balls.
  4. Place the dumplings on top of the simmering mince. Cover the pan with a lid and cook for 20 minutes without opening the lid to keep them fluffy.

3. Prepare the vegetables:

  1. Boil the carrots and swede in salted water until tender. Mash the swede with a little butter.
  2. Steam the cabbage, peas and green beans until cooked but still bright and fresh.

4. Make the mashed potatoes:

  1. Boil the potatoes in salted water until soft.
  2. Drain them, then mash them with butter, milk and salt.

5. Assemble the plate:

  1. Spoon the mashed potatoes onto the plate.
  2. Add a portion of each vegetable.
  3. Place the dumplings on the side and spoon the mince and gravy over everything.
  4. Serve hot and enjoy!
