Crispy Baked Zucchini Tots – A Guilt-Free Cheesy Snack Everyone Will Love

Ingredients:

2 cups grated zucchini (about 2 zucchinis), squeezed dry to yield 1 cup packed

1 large egg

½ cup shredded cheddar cheese

½ cup panko breadcrumbs

1 teaspoon Italian seasoning

¼ teaspoon onion powder

Salt and pepper to taste

Ketchup for serving (optional)

Directions:

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.

Grate the zucchini and place it in a clean kitchen towel. Squeeze out as much excess moisture as possible until you have 1 cup of packed zucchini.

In a mixing bowl, combine the squeezed zucchini, egg, shredded cheddar cheese, panko breadcrumbs, Italian seasoning, onion powder, salt, and pepper. Mix until all ingredients are well combined.

Take about 1 tablespoon of the mixture and shape it into small tot-like cylinders. Place each tot on the prepared baking sheet, leaving a little space between them.

Bake for 20–25 minutes, flipping halfway through baking, until the tots are golden brown and crispy on the outside.

Remove from the oven and let them cool for a few minutes before serving.

Serve warm with ketchup or your favorite dipping sauce (optional).
