Refreshing Lime Mousse Cheesecake
Ingredients:
For the Crust:
2 cups graham cracker crumbs
½ cup melted butter
¼ cup sugar
For the Lime Cheesecake Filling:
16 oz (2 packages) cream cheese, softened
1 cup powdered sugar
1 tablespoon lime zest
3 tablespoons lime juice (freshly squeezed)
1 teaspoon vanilla extract
1½ cups whipped cream (or whipped topping)
For the Lime Mousse Topping:
1 cup heavy whipping cream
3 tablespoons powdered sugar
2 tablespoons lime juice
1 teaspoon lime zest
For Garnish:
Lime slices or wedges
Lime zest (optional)
Whipped cream (optional)
Directions:
Prepare the Crust:
Mix graham cracker crumbs, melted butter, and sugar until combined.
Press mixture evenly into the bottom of a greased 9-inch springform pan.
Chill crust in the refrigerator while preparing filling.
Make the Lime Cheesecake Filling:
Beat cream cheese until smooth.
Add powdered sugar, lime zest, lime juice, and vanilla extract; beat until fluffy.
Fold in whipped cream gently until light and airy.
Spread filling evenly over chilled crust and smooth the top.
Prepare the Lime Mousse Topping:
Whip heavy cream until soft peaks form.
Add powdered sugar, lime juice, and lime zest; whip until stiff peaks form.
Spread mousse carefully over cheesecake layer.
Chill the Cheesecake:
Cover and refrigerate for 4-6 hours or overnight until set.
Garnish and Serve:
Remove cheesecake from pan.
Garnish with lime slices, extra zest, and whipped cream if desired.
