Seafood macaroni cheese
Ingredients:
- 2 cups of dry macaroni
- 6 oz claw crab meat
- 8 oz of peeled and deveined shrimp
- 8 oz sour cream
- 4 tablespoons of butter
- 2 tbsp flour
- 1 spring onion
- 1 can of evaporated milk
- 8 oz block of sharp white cheddar cheese
- 4 oz block of mozzarella cheese
- ¼ cup of panko breadcrumbs
- Salt and black pepper, to taste.
Directions:
1.Preheat the oven to 175°C.
2.Peel and devein the shrimp, if necessary.
3.Cook the macaroni according to the package directions. Drain well.
4.Place the drained macaroni in a large mixing bowl and stir in the sour cream until it is evenly coated.
5.Add the crab meat and mix well.
6.Finely chop the spring onion and set it aside.
7.Grate the white cheddar and mozzarella cheeses and set them aside.
8.In a medium saucepan, melt the butter and cook the shrimp until just done. Remove the shrimp from the pan and chop them once cooled, then add them to the macaroni mixture.
9.In the same saucepan, sauté the chopped onions until tender. Sprinkle in the flour and cook for about one minute.
10.Slowly add the evaporated milk, stirring continuously until the mixture has thickened. 11.Gradually stir in the grated cheddar until melted.
12.Pour the cheese sauce over the macaroni and seafood mixture. Stir to combine. Season with salt and pepper to taste.
13.Transfer to a buttered baking dish. Top with mozzarella, breadcrumbs and a sprinkle of paprika, if desired.
14.Bake for 20–25 minutes or until the top is lightly browned.
15.Serve warm.
