Garlic Mushroom Chicken 

Alternate Version: 20-Minute Skillet Mushroom Chicken

Ingredients:
  • 1½ lb boneless, skinless chicken breasts
  • Salt and black pepper, to taste
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1 tsp ground coriander
  • 2 tbsp extra virgin olive oil
  • 12 oz fresh mushrooms, sliced
  • ½ cup chicken broth
  • 1 tbsp ghee or unsalted butter
  • 3 green onions, chopped
  • 2 garlic cloves, minced
  • Fresh parsley for garnish (optional)
Instructions:

1. Preheat your oven to 200°F to keep the chicken warm.

2. Slice chicken breasts horizontally to create thin cutlets. Season them on both sides with salt, pepper, oregano, paprika, and coriander.

3. In a large skillet, heat olive oil over medium-high heat. Sear the chicken for 3–4 minutes per side, or until nicely browned and cooked through.

4. Remove the chicken from the skillet and place in the warm oven.

5. In the same pan, add butter and sauté mushrooms for 5 minutes or until softened. Stir in the garlic and green onions, then pour in the chicken broth. Season with a bit more salt and pepper.

6. Let the sauce simmer and scrape the bottom of the skillet to deglaze and incorporate all the flavor.

7. Return the chicken to the skillet, spooning the sauce over the top.

8. Garnish with parsley if desired and serve hot.
