🧁 Gooey Amish Pecan Pie Mini Muffins

🛒 Ingredients

  • 1 cup light brown sugar, packed

  • ½ cup all-purpose flour

  • 2 large eggs

  • ½ cup (1 stick) unsalted butter, melted

  • 1 teaspoon vanilla extract

  • 1 cup chopped pecans

  1. Preheat oven to 350°F (175°C).
    Grease a mini muffin tin very well (or use nonstick spray).

  2. In a bowl, combine brown sugar and flour.

  3. Add eggs, melted butter, and vanilla.
    Stir until smooth.

  4. Fold in chopped pecans.

  5. Spoon batter into mini muffin cups, filling about ¾ full.

  6. Bake for 15–18 minutes, until edges are golden brown and centers are set.

  7. Cool in pan for 5 minutes, then carefully remove and transfer to a rack.

  • Do not overbake — they should stay soft and gooey inside.

  • Run a knife around edges if needed to loosen.

  • Let cool slightly before removing; they firm up as they cool.
