Dense, buttery, fruity, and finished with a luscious glaze.

๐Ÿงพ Ingredients

Pound Cake

  • 1ยฝ cups unsalted butter, softened

  • 3 cups sugar

  • 5 large eggs, room temp

  • 3 cups all-purpose flour

  • ยฝ teaspoon baking powder

  • ยฝ teaspoon salt

  • 1 cup crushed pineapple (drained)

  • 1 cup finely chopped strawberries

  • 1 teaspoon vanilla extract

  • ยฝ teaspoon strawberry extract (optional but amazing)

  • ยฝ cup milk or heavy cream

Strawberry Pineapple Glaze

  • 1 cup powdered sugar

  • 2โ€“3 tablespoons pineapple juice

  • 1โ€“2 tablespoons strawberry puree

๐Ÿง Instructions

1. Prep

Preheat oven 325ยฐF (165ยฐC).
Grease & flour a bundt or tube pan.

2. Batter

  1. Cream butter & sugar until fluffy (4โ€“5 min).

  2. Add eggs one at a time.

  3. In bowl: whisk flour, baking powder, salt.

  4. Add dry ingredients alternately with milk.

  5. Fold in pineapple, strawberries, vanilla & extract.

3. Bake

Pour into pan.
Bake 75โ€“85 minutes until skewer comes out clean.

Cool 15 min โ†’ invert โ†’ cool completely.

4. Glaze

Whisk glaze ingredients.
Drizzle generously over cooled cake.
