🍓🍍 Strawberry Pineapple Pound Cake
Dense, buttery, fruity, and finished with a luscious glaze.
🧾 Ingredients
Pound Cake

1½ cups unsalted butter, softened

3 cups sugar
-
5 large eggs, room temp

3 cups all-purpose flour
-
½ teaspoon baking powder
-
½ teaspoon salt
-
1 cup crushed pineapple (drained)

1 cup finely chopped strawberries
-
1 teaspoon vanilla extract
-
½ teaspoon strawberry extract (optional but amazing)

½ cup milk or heavy cream
Strawberry Pineapple Glaze

1 cup powdered sugar
-
2–3 tablespoons pineapple juice
-
1–2 tablespoons strawberry puree
🧁 Instructions
1. Prep
Preheat oven 325°F (165°C).
Grease & flour a bundt or tube pan.
2. Batter

Cream butter & sugar until fluffy (4–5 min).

Add eggs one at a time.

In bowl: whisk flour, baking powder, salt.

Add dry ingredients alternately with milk.

Fold in pineapple, strawberries, vanilla & extract.
3. Bake
Pour into pan.
Bake 75–85 minutes until skewer comes out clean.
Cool 15 min → invert → cool completely.
4. Glaze
Whisk glaze ingredients.
Drizzle generously over cooled cake.
