Description:

This warm, cheesy casserole is the perfect easy and satisfying family dinner. It’s made with mashed red potatoes, juicy chicken, broccoli, crispy bacon and melty cheese.

Ingredients:

– Red potatoes, chopped
– Butter
– Sour cream
– Kosher salt
– Black pepper
– Garlic powder
– Paprika
– Steamed or roasted broccoli florets until crisp-tender
– Shredded or chopped cooked chicken (e.g. rotisserie)
– Cooked and crumbled bacon
– Shredded cheese (cheddar or a blend), divided

Instructions:

Preheat the oven to 175°C and grease a 25 cm baking dish.
Boil the chopped red potatoes until they are tender when pierced with a fork (10–15 minutes), then drain them and return them to the pot.
Steam or roast the broccoli until bright green and slightly tender.
Cook the bacon until crispy, then crumble or chop it.
Mash the potatoes with butter, sour cream, salt, pepper, garlic powder and paprika until creamy and fully combined.
Stir in the broccoli, chicken and bacon, along with half of the shredded cheese.
Transfer the mixture to the prepared baking dish and top with the remaining cheese.
Bake for 20–25 minutes until piping hot, the cheese is golden and bubbling.
Leave to cool for a few minutes before serving.
Notes: Use a mix of sharp cheddar and mozzarella for extra flavour.
Don’t overcook the broccoli as it will continue to cook in the oven.
Leave the potato skins on for a rustic texture.
Warm the chicken before mixing to ensure even baking.
