Honey mustard pasta salad
Ingredients
– 16 oz (450 g) elbow macaroni, cooked and drained
– 1 red bell pepper, diced
– 3 stalks celery, chopped
– 4 spring onions, diced
– 1.5 cups (360 ml) mayonnaise
– 2/3 cup (160 ml) honey mustard
– 2/3 cup (160 ml) sweet pickle relish
– ½ teaspoon (2.5 ml) onion powder
– 1 teaspoon (5 ml) sea salt
– ½ teaspoon (2.5 ml) black pepper
Preparation
1. Add the cooked pasta to a large mixing bowl. Add the celery, bell pepper and spring onions, and mix to combine.
2. In a small bowl, mix the mayonnaise, honey mustard, relish, onion powder, salt and pepper together until smooth.
3. Pour the dressing over the salad and toss until evenly coated.
4. For best results, cover and chill for 1 hour before serving.
