Ham and Red-Eye Gravy

Ingredients

4 slices country ham
1/2 cup strong black coffee
1 tablespoon butter
1 teaspoon sugar, optional
Black pepper to taste

Instructions

Heat a heavy skillet over medium heat. Add the ham slices and fry for 2–3 minutes per side until browned and heated through. Remove the ham from the skillet and keep warm.

Reduce the heat to low. Add butter to the skillet drippings and let it melt. Carefully pour in the black coffee, scraping the bottom of the skillet to loosen all the browned bits. Stir well and simmer for 2–3 minutes until slightly reduced. Add sugar if desired and season with black pepper.

Serve the ham hot with the red-eye gravy spooned over the top or on the side.
