Ingredients

2 lb carrots, peeled and sliced (or baby carrots)

½ cup honey

¼ cup brown sugar

¼ cup unsalted butter, cut into pieces

½ cup water or apple juice

½ tsp salt

¼ tsp black pepper

½ tsp ground cinnamon (optional)

1 tbsp cornstarch + 2 tbsp water (optional, for thicker glaze)
Instructions

Add carrots to the slow cooker.

Pour in water (or apple juice).

Drizzle honey over carrots and sprinkle with brown sugar.

Add butter, salt, pepper, and cinnamon (if using).

Cover and cook:

LOW: 4–5 hours
-
HIGH: 2–3 hours
Stir once halfway if possible.

For a thicker glaze, stir in cornstarch slurry during the last 20–30 minutes.

Taste and adjust seasoning before serving.
