Skillet Country Potatoes

These hearty, homey potatoes are the perfect addition to a breakfast plate, with crispy edges, soft centres and a blend of seasonings that evoke the slow pace of a Southern morning. Simple, warm and full of old-fashioned flavour, they bring back memories of Grandma’s kitchen and cast-iron skillets sizzling at sunrise. One bite feels cosy, familiar and downright perfect.

Ingredients:

– 4–5 medium potatoes, diced (peel on or off)
– 1 small onion, diced
– 1 bell pepper, diced (optional)
– 3 tablespoons butter or bacon grease
– 1 tablespoon olive oil
– 1 teaspoon garlic powder
– 1 teaspoon paprika
– 1/2 teaspoon onion powder
– Salt and black pepper to taste
– Fresh parsley or green onions for garnish (optional)

Instructions:

Rinse the diced potatoes and pat them dry to help them crisp up better.
Heat the butter (or bacon grease) and olive oil in a large skillet over a medium-high heat.
Add the potatoes and spread them out in an even layer.
Cook without stirring for 4–5 minutes to get a good sear.
Add the diced onion and bell pepper, then sprinkle over the garlic powder, paprika, onion powder, salt and pepper.
Stir and cook for a further 15–20 minutes, stirring occasionally, until the potatoes are golden and tender.
Taste and adjust the seasoning if necessary.
Garnish with parsley or spring onions, if desired.

Serve warm alongside eggs, sausages and biscuits, or as a side dish for a traditional Southern breakfast.
