Southern Baked Chicken Thighs
These Southern Baked Chicken Thighs are the kind of rich, soulful comfort food that makes the whole house smell like home. Ingredients:
– 8 bone-in, skin-on chicken thighs
– 2 tablespoons olive oil or melted butter
– 1 teaspoon paprika
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1/2 teaspoon dried thyme
– 1/2 teaspoon dried oregano
– 1/2 teaspoon smoked paprika (optional for extra depth)
Instructions:
Preheat the oven to 200°C (400°F). Line a baking dish or tray with foil for easy clean-up.
Pat the chicken thighs dry to help the skin get perfectly crispy.
Rub the thighs with olive oil or melted butter.
Mix the paprika, garlic powder, onion powder, salt, pepper, thyme, oregano and optional smoked paprika.
Season the chicken generously on all sides.
Arrange the thighs skin-side up in the baking dish.
Bake for 35–45 minutes, or until the skin is crispy and the chicken reaches an internal temperature of 74°C (165°F).
For extra crackling skin, broil the top for 2–3 minutes.
Leave to rest for a few minutes before serving.
Serve with mashed potatoes, collard greens, rice, cornbread or roasted vegetables for pure Southern comfort in every bite.
