Iron Skillet Apple Pie (Cast Iron)

  • Serves: 6–8

Ingredients

Apple Filling

  • 6–7 medium apples (Granny Smith or Honeycrisp are best)

  • ¾ cup granulated sugar

  • ¼ cup brown sugar

  • 1½ tsp ground cinnamon

  • ¼ tsp nutmeg (optional)

  • 1 tbsp lemon juice

  • 1 tsp vanilla extract

  • 2 tbsp all-purpose flour or cornstarch

  • Pinch of salt

  • 2 tbsp unsalted butter (for dotting)

Crust

  • 1 double pie crust (homemade or store-bought)

  • 1 egg (for egg wash)

  • 1 tbsp milk or water

  • 1 tbsp sugar (for sprinkling)

Instructions

Prepare the Apples

  • Peel, core, and slice the apples (not too thin).

  • In a large bowl, mix apples with sugars, cinnamon, nutmeg, lemon juice, vanilla, flour, and salt.

  • Set aside for 10 minutes to release juices.

Preheat

  • Preheat oven to 190°C (375°F).

Assemble in the Skillet

  • Lightly butter a 10–12 inch cast iron skillet.

  • Lay one pie crust into the skillet, pressing it gently into the sides.

  • Pour in the apple mixture evenly.

  • Dot the top with small pieces of butter.

Top Crust

  • Cover with the second crust (whole or rustic folded style).

  • Cut small slits on top to release steam.

  • Beat egg with milk and brush over crust.

  • Sprinkle with sugar.

Bake

  • Bake for 45–50 minutes, until the crust is deep golden brown and filling is bubbling.

  • If crust browns too fast, loosely cover with foil.

Cool & Serve

  • Let rest 15–20 minutes before slicing.

  • Serve warm with:

    • Vanilla ice cream 🍨

    • Whipped cream

    • Or caramel sauce

Tips

  • For extra flavor, add ½ tsp cardamom or a splash of apple cider.

  • No cast iron? A heavy oven-safe skillet works too.
