Ingredients:
2 sheets of puff pastry, thawed
1 tablespoon olive oil
1 small onion, diced
2 cloves of garlic, minced
1 cup of cooked chicken, shredded
1 cup of mixed vegetables (such as peas, carrots, and corn)
1 teaspoon dried thyme
Salt and pepper to taste
1 egg, beaten (for egg wash)
Instructions:
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion becomes translucent and the garlic is fragrant.
Add the cooked chicken and mixed vegetables to the skillet. Stir in the dried thyme, salt, and pepper. Cook for another 2-3 minutes until the vegetables are heated through.
On a lightly floured surface, roll out each sheet of puff pastry to flatten it slightly. Cut each sheet into 4 equal squares.
Spoon a portion of the chicken and vegetable mixture onto the center of each pastry square, leaving a small border around the edges.
Fold each pastry square in half diagonally, creating a triangle shape. Press the edges firmly to seal the pies.
Transfer the hand pies to the prepared baking sheet. Brush the tops with the beaten egg wash, which will give them a golden color when baked.
Bake the hand pies in the preheated oven for about 20 minutes, or until they are puffed up and golden brown.
Remove from the oven and let them cool slightly before serving. These hand pies can be enjoyed warm or at room temperature.
