⭐ Lebkuchen Bars

Ingredients

Dry Ingredients

  • 2 cups all-purpose flour

  • 1 cup almond flour (or finely ground almonds)

  • 1 cup brown sugar

  • 1 tsp baking powder

  • 1 tsp cinnamon

  • 1 tsp ground ginger

  • ½ tsp nutmeg

  • ½ tsp ground cloves

  • ½ tsp allspice

  • ¼ tsp salt

Wet Ingredients

  • 2 large eggs

  • ½ cup honey

  • ¼ cup molasses

  • 1 tsp vanilla extract

  • ½ cup melted butter

Optional Add-ins

  • ½ cup chopped candied orange peel

  • ½ cup chopped nuts (almonds, walnuts, pecans)

Glaze

  • 1 cup powdered sugar

  • 2–3 tbsp milk or lemon juice

  • ½ tsp vanilla (optional

Instructions

1. Preheat

Preheat oven to 350°F (175°C).
Line a 9×13 baking pan with parchment or lightly grease it.

2. Mix Dry Ingredients

In a large bowl, whisk together:

  • All-purpose flour

  • Almond flour

  • Brown sugar

  • Baking powder

  • All spices

  • Salt

3. Mix Wet Ingredients

In another bowl, whisk:

  • Eggs

  • Honey

  • Molasses

  • Melted butter

  • Vanilla

4. Combine

Pour the wet mixture into the dry mixture and stir until fully combined.
Fold in candied orange peel or nuts, if using.

5. Bake

Spread batter evenly into the pan.
Bake 22–28 minutes, or until the center is set and edges are lightly golden.

6. Glaze

While warm, brush with the glaze:

  • Mix powdered sugar with milk or lemon juice until pourable.

  • Spread evenly over the warm bars for a shiny finish.

Let cool completely before cutting into squares.

  • For more traditional Lebkuchen flavor, use candied citrus peel.

  • Add a splash of rum or brandy to the glaze for old-world authenticity.

  • Store covered—Lebkuchen actually gets better after a day or two as flavors deepen.
