🍋 Lemon Meltaway Truffles

Ingredients

  • 1 cup white chocolate chips

  • 3 tbsp unsalted butter

  • 3 tbsp heavy cream

  • 1–2 tbsp lemon juice (fresh)

  • 1 tbsp lemon zest

  • ½ tsp vanilla extract (optional)

  • ½ cup powdered sugar (for rolling)

Instructions

1. Make the Lemon Mixture

  1. In a small saucepan on low heat, combine

    • white chocolate chips

    • butter

    • heavy cream

  2. Stir constantly until melted and smooth — do not boil.

2. Add the Lemon Flavor

Remove from heat and stir in:

  • lemon juice

  • lemon zest

  • vanilla (optional)

Mixture should look creamy like in the image.

3. Chill

  • Pour mixture into a bowl.

  • Refrigerate 1–2 hours, or until firm enough to scoop.

4. Roll Into Balls

  • Scoop small portions with a spoon.

  • Roll quickly between your hands into balls.

  • If too soft, chill again.

5. Coat

  • Roll each truffle in powdered sugar to finish.

Tips

  • Add a drop of yellow food coloring for a brighter look (optional).

  • Store in refrigerator for up to 1 week.

  • Freeze well for long-term storage.
