🥜 Pecan Puffs (Mexican Wedding Cookie–Style)

Ingredients

  • 1 cup (2 sticks) unsalted butter, softened

  • 2 tbsp granulated sugar

  • 2 cups all-purpose flour

  • 1 tsp vanilla extract

  • 1 cup finely chopped pecans

  • Powdered sugar, for rolling

Instructions

1. Make the dough

  1. Preheat oven to 300°F (150°C).

  2. Beat butter and sugar together until creamy (it will still be lightly sweet).

  3. Add vanilla.

  4. Mix in flour until just combined.

  5. Stir in chopped pecans — dough will be thick, almost like shortbread

2. Shape the puffs

  • Roll dough into small balls (about 1 inch).

  • Place on an ungreased baking sheet — they don’t spread much.

3. Bake

  • Bake for 35–40 minutes, until bottoms are lightly golden.

  • Cookies will still look pale on top — that’s normal.

4. Coat in powdered sugar

  1. Let cookies cool 2–3 minutes (not fully).

  2. Roll warm cookies in powdered sugar.

  3. When completely cool, roll in powdered sugar again for the classic snowy finish
