🥜 Pecan Puffs (Mexican Wedding Cookie–Style)
Ingredients

1 cup (2 sticks) unsalted butter, softened

2 tbsp granulated sugar

2 cups all-purpose flour

1 tsp vanilla extract

1 cup finely chopped pecans

Powdered sugar, for rolling
Instructions
1. Make the dough
-
Preheat oven to 300°F (150°C).

Beat butter and sugar together until creamy (it will still be lightly sweet).

Add vanilla.

Mix in flour until just combined.

Stir in chopped pecans — dough will be thick, almost like shortbread
2. Shape the puffs

Roll dough into small balls (about 1 inch).

Place on an ungreased baking sheet — they don’t spread much.
3. Bake
-
Bake for 35–40 minutes, until bottoms are lightly golden.

Cookies will still look pale on top — that’s normal.
4. Coat in powdered sugar

Let cookies cool 2–3 minutes (not fully).

Roll warm cookies in powdered sugar.

When completely cool, roll in powdered sugar again for the classic snowy finish
