🍗 Homemade KFC-Style Fried Chicken

8–10 chicken pieces (drumsticks, thighs, breasts, wings)

2 cups buttermilk

1 tsp salt
Seasoned Flour (KFC-style blend)

2 cups all-purpose flour

2 tsp salt

1 tsp black pepper
-
1 tsp paprika
-
1 tsp garlic powder
-
1 tsp onion powder
-
1 tsp dried thyme
-
1 tsp dried basil
-
1 tsp dried oregano
-
½ tsp celery salt
-
½ tsp ginger powder
-
½ tsp white pepper (important for KFC flavor)
For Frying

Vegetable oil or peanut oil (enough for deep frying)
Instructions
1. Marinate the chicken

In a bowl, mix buttermilk and salt.

Add the chicken pieces and let them soak for at least 2 hours, preferably overnight.
This tenderizes and adds moisture.
2. Prepare the seasoned flour
Mix all of the flour and spices together in a large bowl.
3. Dredge the chicken

Remove chicken from the buttermilk, letting excess drip off.

Coat each piece thoroughly in the seasoned flour.

Press the flour firmly onto the chicken to form a thick coating.

Place coated pieces on a tray and let them rest 10–15 minutes — this helps the crust stick.
4. Fry the chicken

Heat oil to 350°F (175°C).

Fry 2–3 pieces at a time; avoid crowding.

Cook 12–15 minutes, turning occasionally, until golden brown and cooked to 165°F internally.

Drain on a wire rack for max crispiness.
