For the Meatloaf
-
2 lbs ground beef (or 1 lb beef + 1 lb ground pork for extra flavor)
-
1 cup breadcrumbs
-
1 small onion, finely diced
-
2 cloves garlic, minced
-
½ cup milk
-
2 large eggs
-
2 tsp Worcestershire sauce
-
1 tsp salt
-
½ tsp black pepper
-
½ tsp smoked paprika (optional)
For the Cheese Filling
-
4 slices Provolone cheese
-
1 cup shredded mozzarella cheese
For the Glaze (optional)
-
½ cup ketchup
-
2 tbsp brown sugar
-
1 tsp Dijon mustard
🥩 Instructions
1. Preheat and prepare
-
Preheat oven to 375°F (190°C).
-
Line a baking sheet with parchment paper or lightly grease a loaf pan.
2. Make the meat mixture
-
In a large bowl, combine ground meat, breadcrumbs, onion, garlic, milk, eggs, Worcestershire sauce, salt, pepper, and paprika.
-
Mix gently until just combined — avoid overmixing to keep meatloaf tender.
3. Form the meatloaf and add cheese
-
On a sheet of parchment, shape half of the meat mixture into a rectangle (about 9×5 inches).
-
Layer Provolone slices and shredded mozzarella in the center.
-
Top with the remaining meat mixture and gently seal the edges around the cheese.
4. Add glaze
-
In a small bowl, mix ketchup, brown sugar, and Dijon mustard.
-
Spread glaze evenly over the top of the meatloaf.
5. Bake
-
Bake for 55–65 minutes, or until the internal temperature reaches 160°F (71°C).
-
Let rest for 10 minutes before slicing — this helps the cheese stay gooey inside.
6. Serve
Slice and serve with mashed potatoes, roasted vegetables, or a simple salad.
