🍕 Low-carb pepperoni pizza crisps

✅ Ingredients:

  • 24 standard-size slices of pepperoni
  • 1 cup of shredded mozzarella cheese
  • 1/2 teaspoon Italian seasoning (optional)
  • 1/4 teaspoon of garlic powder (optional).
  • Optional toppings: grated Parmesan cheese, crushed red pepper, fresh basil.

👩‍🍳 Directions:

  1. Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Arrange the pepperoni slices on the prepared baking sheet in a single layer. Make sure they are not overlapping.
  3. Top each slice with 1–1.5 teaspoons of shredded mozzarella.
  4. Sprinkle with Italian seasoning and garlic powder, if desired.
  5. Bake for 6–10 minutes until the cheese is bubbling and the edges of the pepperoni are crisping up.
  6. Remove from the oven and leave to cool on the baking sheet for 5–10 minutes – they will crisp up more as they cool.

📝 Tips:

  • You can use turkey pepperoni for a lighter version.
  • For extra crispiness, blot with kitchen roll right after baking to absorb excess grease.
  • They are great for dipping in low-carb marinara sauce or ranch dressing.

🍴 Serving suggestion:

  • Serve as a snack, appetiser or low-carb party treat. These crisps will keep in an airtight container for up to three days.
