Cowboy Cookies

 

My grandma swore by these cowboy cookies, and honestly, so do I now!
Every bite is a perfect mix of chewy, chocolatey, and just a hint of cinnamon spice. They’re the kind of cookie that makes your whole kitchen smell like pure comfort.
**Cowboy Cookies**
Ingredients:
* 2 cups all-purpose flour
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 1 teaspoon cinnamon
* 1 cup (2 sticks) unsalted butter, softened
* 1 cup granulated sugar
* 1 cup packed brown sugar
* 2 large eggs
* 1 teaspoon vanilla extract
* 3 cups old-fashioned rolled oats
* 2 cups chocolate chips (or a mix of chips and chopped nuts!)
Instructions:
1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
2. Whisk together the flour, baking soda, salt, and cinnamon in a medium bowl.
3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
4. Beat in the eggs one at a time, then stir in the vanilla extract.
5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
6. Stir in the oats and chocolate chips until evenly distributed.
7. Drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between cookies.
8. Bake for 9-11 minutes, or until the edges are golden brown and the centers are still slightly soft.
9. Let cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Pro Tip: Don’t overbake these! They continue to set up as they cool, and you want that perfectly chewy center.
