**Here’s how to make a big batch:**
**Ingredients**
* 6 tomatillos, husked and rinsed
* 1 jalapeño (optional, for a little heat)
* 2 ripe avocados, pitted and peeled
* A generous handful of fresh cilantro, stems removed
* 1/2 cup Mexican crema (or sour cream if you can’t find it)
* 1 tablespoon minced garlic
* Juice of 1-2 limes, to taste
* Salt, to taste
**Instructions**
1. Roughly chop the tomatillos and jalapeño (if using).
2. In a food processor or blender, combine the chopped tomatillos and jalapeño with the avocados, cilantro, crema, minced garlic, and the juice of one lime.
3. Pulse until mostly smooth, but with a little bit of texture remaining. Don’t over-process it into a paste!
4. Season generously with salt. Taste and add more lime juice or salt as needed.
5. Spoon into a serving bowl and let it chill for at least 15 minutes to let the flavors meld.
The trick to keeping it bright green is to add the lime juice right before serving and definitely don’t over-blend!
