My mom made this every time the weather got a little chilly, and it was always the best part of the day. The smell of it baking filled the whole house, a sweet, comforting hug.
This “poor man’s pudding” is ridiculously easy and tastes like pure comfort. The flour sinks to the bottom as it bakes, creating this magical, slightly chewy crust all on its own. It’s seriously one of those simple desserts that tastes incredibly decadent.
Here’s how to make it:
**Ingredients**
* 1/2 cup all-purpose flour
* 1/2 cup granulated sugar
* 1 teaspoon baking powder
* 1/4 teaspoon salt
* 1/2 cup milk
* 1/4 cup unsalted butter, melted
* 1 teaspoon vanilla extract
For the “sauce”:
* 1 cup packed light brown sugar
* 1 cup boiling water
**Instructions**
1. Preheat your oven to 350°F (175°C). Lightly grease a small baking dish (about 8×8 inches).
2. In a medium bowl, whisk together the flour, granulated sugar, baking powder, and salt.
3. In a separate small bowl, whisk together the milk, melted butter, and vanilla extract.
4. Pour the wet ingredients into the dry ingredients and stir until just combined. Don’t overmix! It will be a thick batter.
5. Spoon the batter evenly into the prepared baking dish.
6. In another bowl, stir together the brown sugar and granulated sugar for the sauce. Sprinkle this evenly over the batter.
7. Carefully pour the boiling water over the sugar mixture. Don’t worry if it looks a little messy; it will settle.
8. Bake for 30-35 minutes, or until the topping is bubbly and the pudding is set. The edges should be golden brown.
9. Let it cool for about 10 minutes before digging in. It’s best served warm, maybe with a scoop of vanilla ice cream!
