The smell of Christmas isn’t complete without these snickerdoodles! They’re soft, chewy, and have that perfect cinnamon-sugar hug in every bite. My family insists on having a batch (or two!) every holiday season, and they always disappear so fast as gifts or just for snacking. This year, I thought I’d share them with you all!**Chewy Snickerdoodles**These are secretly super easy to make, and the dough is perfect for rolling into little snowballs.Here’s what you’ll need:* 2 ½ cups all-purpose flour* 2 tsp baking powder* ½ tsp salt* 1 cup salted butter, softened* 2 cups white sugar (divided)* 2 large eggs* 1 tsp vanilla extract* For the cinnamon-sugar coating: 2 tbsp ground cinnamon + ¼ cup granulated sugarLet’s get baking!1. Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.3. In a large bowl, cream together the softened butter and 1 ¾ cups of the white sugar until light and fluffy.4. Beat in the eggs one at a time, then stir in the vanilla extract.5.
