🛒 Ingredients:

1 lb of fresh okra, washed and sliced into 1 cm rounds

1 cup of buttermilk (or milk)

1 cup of yellow cornmeal

½ cup of plain flour

1 teaspoon of salt

½ teaspoon black pepper

½ teaspoon of paprika (optional, for flavour)

½ teaspoon of garlic powder (optional).

Vegetable oil for frying

👩‍🍳 Instructions:

Prepare the okra: wash it, pat it dry and slice it into even pieces.

Soak the okra by placing it in a bowl and pouring in the buttermilk. Stir to coat well.

In another bowl, mix together the cornmeal, flour, salt, pepper, paprika and garlic powder.

Drain the excess buttermilk, then toss the okra in the cornmeal mixture until fully coated.

Heat the oil
Heat about 2.5 cm of oil in a frying pan or deep pan to 175°C (350°F).

Fry the okra in small batches for 3–4 minutes, turning occasionally, until golden and crispy.

Drain and season.
Remove with a slotted spoon and place on kitchen paper. Sprinkle lightly with salt while hot.

🌟 Tips for extra crunch

– Don’t overcrowd the pan.

Use fresh, young okra for the best texture.

Serve immediately for maximum crispiness.
