π Classic Southern Peach Cobbler
Ingredients
For the peach filling:
6 cups of sliced peaches (fresh, canned and drained, or frozen and thawed)
1 cup of granulated sugar (adjust if the peaches are very sweet).
1 tablespoon of lemon juice
1 teaspoon of vanilla extract
1 teaspoon cinnamon
ΒΌ teaspoon of nutmeg
2 tablespoons of cornflour (for thickening).
For the cobbler topping (cake-style crust):
1 cup of all-purpose flour
1 cup of granulated sugar
1 teaspoon of baking powder
ΒΌ teaspoon salt
1 cup of milk
Β½ cup (1 stick) of melted unsalted butter
π₯ Instructions:
1. Preheat the oven.
Preheat the oven to 175Β°C (350Β°F).
2. Prepare the peach filling.
In a large bowl, mix:
Peaches
Sugar
lemon juice
vanilla
cinnamon
Nutmeg
Cornflour
Stir well until evenly coated. Set aside.
3. Prepare the baking dish.
Pour the melted butter into a 23×33 cm baking dish.
Do not stir β just leave it to sit at the bottom.
4. Make the batter:
In another bowl, mix:
Flour
Sugar
Baking powder
Salt.
Add the milk and stir until smooth.
Pour the batter evenly over the melted butter.
β Do not mix.
Add peaches.
Spoon the peach mixture evenly over the batter.
Again, do not stir.
The batter will rise around the peaches while baking.
6. Bake.
Bake for 40β45 minutes, or until the top is golden brown.
The top is golden brown.
The filling is bubbling.
β Serve
Leave to cool for 10β15 minutes.
Serve warm with:
Vanilla ice cream.
Whipped cream
