**Tropical Pineapple Delight Cobbler**
This is a super simple and incredibly delicious cobbler that’s perfect for any occasion.
**Ingredients:**
-
1 (20 ounce) can crushed pineapple, undrained
-
* 1/2 cup granulated sugar
-
* 1/4 cup all-purpose flour
-
* 1 teaspoon ground cinnamon
-
* 1/4 teaspoon ground nutmeg
-
* 1/4 teaspoon salt
-
* 1/2 cup (1 stick) unsalted butter, melted
**For the Topping:**
-
1 cup all-purpose flour
-
* 1/4 cup granulated sugar
-
* 2 teaspoons baking powder
-
* 1/4 teaspoon salt
-
* 1/2 cup milk
-
* 1/4 cup unsalted butter, softened
**Instructions:**
-
**Preheat and Prep:** Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish.
-
2. **Pineapple Base:** In a medium bowl, combine the undrained crushed pineapple, 1/2 cup sugar, 1/4 cup flour, cinnamon, nutmeg, and 1/4 teaspoon salt. Stir until well combined. Pour this mixture into the prepared baking dish.
-
3. **Melted Butter Layer:** Drizzle the 1/2 cup melted butter evenly over the pineapple mixture in the baking dish. Don’t stir!
-
4. **Make the Topping:** In a separate bowl, whisk together 1 cup flour, 1/4 cup sugar, baking powder, and 1/4 teaspoon salt.
-
5. **Add Wet Ingredients:** Cut in the 1/4 cup softened butter until the mixture resembles coarse crumbs. Then, stir in the milk until just combined, creating a thick batter.
-
6. **Top the Cobbler:** Drop spoonfuls of the topping mixture evenly over the pineapple layer in the baking dish. It doesn’t need to cover it completely; the topping will spread as it bakes.
-
7. **Bake:** Bake for 30-40 minutes, or until the topping is golden brown and a toothpick inserted into the center comes out clean.
-
8. **Serve:** Let the cobbler cool slightly before serving. It’s absolutely divine served warm with a scoop of vanilla ice cream or a dollop of whipped cream!
