**Dreamy Strawberry White Chocolate Truffles**
**Yields:** About 20-25 truffles
**Prep time:** 20 minutes
**Chill time:** 1 hour
**Ingredients:**
  • 8 ounces good quality white chocolate, finely chopped
  • * 1/4 cup freeze-dried strawberries, finely crushed (you’ll want a powder-like consistency)
  • * 2 tablespoons heavy cream, warmed slightly
  • * 1/2 teaspoon vanilla extract
  • * Optional: Extra crushed freeze-dried strawberries or white chocolate shavings for rolling
**Instructions:**
  • **Melt the White Chocolate:** Place the finely chopped white chocolate in a heatproof bowl.
  • 2. **Infuse the Cream:** In a small saucepan, gently warm the heavy cream until it’s steaming but not boiling. Pour the warm cream over the chopped white chocolate. Let it sit for 5 minutes without stirring to allow the chocolate to melt.
  • 3. **Whisk to Smoothness:** Gently whisk the white chocolate and cream together, starting from the center and working your way out, until you have a completely smooth and glossy ganache.
  • 4. **Add the Strawberry Magic:** Stir in the finely crushed freeze-dried strawberries and the vanilla extract. Mix until everything is well combined and the ganache has a beautiful pink hue.
  • 5. **Chill for Rolling:** Cover the bowl with plastic wrap, pressing it directly onto the surface of the ganache to prevent a skin from forming. Refrigerate for at least 1 hour, or until firm enough to roll into balls.
  • 6. **Form the Truffles:** Once chilled, use a small spoon or a melon baller to scoop out portions of the ganache. Roll them between your palms to form small, bite-sized balls. If the mixture gets too soft, pop it back in the fridge for a few minutes.
  • 7. **Finish & Serve:** For an extra touch, you can gently roll the truffles in more crushed freeze-dried strawberries or white chocolate shavings. Place the finished truffles on a parchment-lined plate or in mini cupcake liners.
  • 8. **Enjoy!** These are best stored in an airtight container in the refrigerator. Let them come to room temperature for a few minutes before serving for the creamiest texture.
Happy truffle making! Let me know if you try these!
