 Prime Rib with Roasted Potatoes

Ingredients

Prime Rib (4–5 lb):
• 1 prime rib roast
• 2 tbsp olive oil
• 1 tbsp kosher salt
• 1 tbsp black pepper
• 1 tbsp garlic powder
• 1 tsp onion powder
• 1 tsp paprika
• Fresh rosemary & thyme
Roasted Potatoes:
• 2 lb baby potatoes, halved
• 2 tbsp olive oil
• 1 tsp salt
• 1 tsp pepper
• 1 tsp garlic powder
• 1 tsp paprika

Instructions

1. Prep Prime Rib: Pat dry. Rub with olive oil and all seasonings. Let rest 30 minutes.
2. High-Heat Start: Roast at 475°F (250°C) for 15 minutes to create crust.
3. Slow Roast: Reduce heat to 325°F (165°C) and cook 1.5–2 hours, or until internal temp hits 125°F–130°F for medium-rare.
4. Rest: Remove from oven, tent with foil, and rest 20–30 minutes.
5. Roast Potatoes: Toss potatoes with oil + spices. Roast at 400°F (200°C) for 35–40 minutes, shaking halfway.
6. Serve: Slice prime rib, plate with crispy potatoes.
