Classic creamy Southern potato salad with tender potatoes, eggs, and simple pantry flavors — perfect for cookouts and holidays!

Ingredients:
• 3 lbs russet or Yukon gold potatoes, peeled and cubed
• 6 hard-boiled eggs, sliced
• 1 cup mayonnaise
• 2 tablespoons yellow mustard
• ½ cup sweet relish
• ¼ cup finely chopped onion
• Salt and black pepper, to taste
• Paprika, for garnish
Instructions:
1. Add cubed potatoes to a large pot of salted water. Bring to a boil and cook 15–20 minutes until fork-tender. Drain and let cool slightly.
2. In a large bowl, gently mash some of the potatoes, leaving others chunky for texture.
3. Stir in mayonnaise, mustard, sweet relish, and chopped onion until creamy.
4. Season with salt and black pepper to taste.
5. Fold in sliced hard-boiled eggs carefully.
6. Transfer to a serving bowl and top with extra egg slices and a light sprinkle of paprika.
7. Chill at least 1 hour before serving for best flavor.
