Garlic prime rib bites with roasted carrots and charred broccoli
A high-protein, flavour-packed meal featuring juicy, seared prime rib bites; caramelised, roasted carrots; and crispy, charred broccoli with a touch of balsamic vinegar. Easy, fast and incredibly satisfying!

Ingredients
For the prime rib bites:
• 300 g cooked prime rib, cut into bite-sized pieces
• 1 tbsp olive oil
• 1 garlic clove, minced
• Salt and black pepper
Optional: ½ tsp steak seasoning
For the roasted carrots:
• 3–4 large carrots, cut into sticks
• 1 tbsp olive oil
• Salt and pepper
For the charred broccoli:
• 2 cups of broccoli florets
• 1 tbsp olive oil
• Salt and pepper
Optional: balsamic glaze for drizzling
Directions
1. Roast the carrots.
Toss the carrot sticks in olive oil, salt and pepper.
• Roast at 220°C (425°F) for 20–25 minutes until caramelised.
2. Char the broccoli.
On a separate tray, toss the broccoli in oil, salt and pepper.
• Roast for 12–15 minutes until the edges are crispy and browned.
3. Sear the prime rib bites:
Heat a frying pan over a high heat with a drizzle of oil.
Add the prime rib pieces and season with salt, pepper and garlic.
• Sear for 1–2 minutes on each side – just enough to heat and brown without overcooking.
4. Assemble:
Plate up the prime rib bites with roasted carrots and charred broccoli.
• Drizzle with balsamic glaze if desired.
