🥦🧀 Creamy Cheesy Asparagus Casserole

Ingredients

2 lb fresh asparagus, trimmed and cut into 2-inch pieces

2 tbsp butter

2 tbsp flour
-
1½ cups milk

½ cup heavy cream
-
1 tsp garlic powder
-
½ tsp onion powder

Salt & pepper to taste

1½ cups shredded cheddar cheese

½ cup shredded mozzarella or Parmesan
-
½ cup sour cream
-
½ cup crushed Ritz crackers (or breadcrumbs)

2 tbsp melted butter (for topping)
Instructions

Preheat oven to 375°F (190°C). Grease casserole dish.

Blanch asparagus in boiling water for 2–3 minutes. Drain.

In saucepan, melt butter. Whisk in flour, cook 1 minute.

Slowly whisk in milk and cream. Simmer until thick.

Stir in garlic powder, onion powder, salt, pepper.

Remove from heat and mix in cheeses and sour cream.

Fold asparagus into sauce.

Transfer to baking dish.

Mix crackers with melted butter and sprinkle on top.

Bake 25–30 minutes until bubbly and golden.
