Old-School Pecan Dandy Do’s

Ingredients

  • 2 cups granulated sugar

  • ½ cup evaporated milk

  • ¼ cup light corn syrup

  • ¼ cup unsalted butter

  • Pinch of salt

  • 1 tsp vanilla extract

  • 2 cups chopped pecans

Instructions

  1. Line a baking sheet with wax paper or parchment. Set aside.

  2. In a heavy saucepan, combine sugar, evaporated milk, corn syrup, butter, and salt.

  3. Cook over medium heat, stirring constantly, until mixture comes to a steady boil.

  4. Continue cooking and stirring until mixture reaches 235–238°F (soft-ball stage)
    (about 5–7 minutes).

  5. Remove from heat and stir in vanilla.

  6. Quickly fold in chopped pecans.

  7. Drop spoonfuls onto prepared baking sheet.

  8. Let cool and set completely (about 30 minutes).

Tips for Perfect Dandy Do’s

  • Use a candy thermometer for best results.

  • Stir constantly to prevent scorching.

  • If mixture thickens too fast, work quickly—it sets fast!
