Oklahoma Nut Candy

Ingredients

  • 2 cups granulated sugar

  • ½ cup evaporated milk

  • ¼ cup light corn syrup

  • ¼ cup unsalted butter

  • Pinch of salt

  • 1 tsp vanilla extract

  • 2 cups mixed nuts or peanuts/pecans (chopped or whole)

Instructions

  1. Line a baking sheet with wax paper or parchment.

  2. In a heavy saucepan, combine sugar, evaporated milk, corn syrup, butter, and salt.

  3. Cook over medium heat, stirring constantly, until mixture reaches a steady boil.

  4. Continue boiling and stirring until mixture reaches 235–238°F (soft-ball stage)
    (about 6–8 minutes).

  5. Remove from heat and stir in vanilla.

  6. Quickly fold in nuts.

  7. Drop spoonfuls onto prepared baking sheet.

  8. Let cool completely until firm.
