 Healthy Scramble Veggie Plate

Ingredients

  • Eggs (scrambled)
  •  Mushrooms
  • Cherry tomatoes
  • Kale (or spinach)
  • Avocado or guacamole
  • Olive oil
  •  Salt & black pepper
  • Fresh herbs (optional)

Instructions

Scramble eggs
Cook eggs gently with a little olive oil, salt, and pepper. Soft, not dry. 
Sauté mushrooms
Pan-fry mushrooms until golden and juicy. 
Cook greens
Lightly sauté kale until just wilted. 
Fresh tomatoes
Toss cherry tomatoes with olive oil and herbs. 
Assemble
Plate eggs, mushrooms, greens, tomatoes, and add avocado on top.
